Cherry Chewbilees
Crust
1 cup walnut pieces, divided
1 & 1/4 c. all-purpose flour
1/2 c. firmly packed brown sugar
1/2 c. shortening
1/2 c. flake coconut |
Filling
2 - 8 oz. pkgs.cream cheese, softened
2/3 c. granulated sugar
2 eggs
2 tsp. vanilla
1 lg. can cherry pie filling |
Heat
oven to 350 F. Grease 13X9X2-inch pan with shortening. Set aside. Chop 1/2 cup nuts
coarsely for topping. Set aside and chop remaining 1/2 cup nuts finely.
For crust, combine flour and brown sugar. Cut in shortening until fine crumbs form.
Add 1/2 cup finely chopped nuts and coconut. Mix well. Remove 1/2 cup. Set aside. Press
remaining crumbs in bottom of pan. Bake at 350 for 12 - 15 minutes, until edges are
lightly browned.
For filling, beat cream cheese, granulated sugar, eggs and vanilla in small bowl at
med. speed of electric mixer until smooth. Spread over hot baked crust. Return to
oven. Bake 15 minutes longer. Spread cherry pie filling over cheese layer. Combine
reserved coarsely chopped nuts and reserved crumbs. Sprinkle evenly over cherries. Return
to oven. Bake 15 minutes longer. Cool, Refrigerate several hours. Cut into bars. Serves
about 12 - 16 people.

Pumpkin Pie Cake

- 16oz can pumpkin
1 - 12 oz can evaporated milk
1 - 1/2 cups granulated sugar
3 - eggs
1/2 tsp. salt |
2
tsp. cinnamon
1 tsp. nutmeg
1 1/2 tsps.ginger
1 cup pecan pieces
2 sticks butter |
Mix
pumpkin, milk, sugar, eggs, salt and spices in a bowl and pour into a 9x13 greased cake
pan. Sprinkle yellow cake mix on top and pat it down. Sprinkle nuts over the top, melt
butter and drizzle that over the top. Bake at 350 for 45-60 mins.

Hot Mulled Cider
1/2 cup brown sugar
1/4 teaspoon salt
2 quarts cider
1 teaspoon whole allspice
1 teaspoon whole cloves
3 inches stick cinnamon
Dash nutmeg
Combine brown sugar, salt, and cider. Tie
spices in small piece of cheesecloth; add. Simmer, covered, 20 minutes. Remove
spices. Serve hot with twist of orange peel; use cinnamon sticks as muddlers. Makes 10
servings.
Chicken Broccoli Stuffing Bake

1 can (26 ounces) cream of
mushroom soup
1 1/2 cups milk
1 pkg. (14ozs.) cubed herb seasoned stuffing
3 cups cubed cooked chicken or turkey
2 pkgs (10ozs.) frozen chopped broccoli, thawed and drained
2 stalks celery, finely chopped (about 1 cup)
1 cup shredded Swiss cheese (4 ozs.)
In a large bowl, combine soup and milk. Stir in stuffing, chicken, broccoli, and celery.
Spoon into 3-quart oblong baking dish. Bake at 375 F. 35 minutes. Sprinkle with cheese.
Bake 5 minutes or until cheese is melted. Makes 12 1/2 cups or 8 servings.

Sweet Potato Casserole
1/2
cup butter, softened
3 cup sweet potatoes, mashed
1 large can evaporated milk
3/4 cup sugar
2 eggs |
1 cup
coconut, optional
1/2 cup raisins, optional
1 cup brown sugar
1 cup chopped pecans |
Cook and mash potatoes. add
milk, sugar, butter, eggs, coconut and raisins. Mix brown sugar with chopped pecans.
Pour potato mixture in buttered baking dish. Top with brown sugar and pecans bake at 350
for 30 minutes or until done.

Green Bean Casserole
1 can Cr of
Mushroom Soup
1/4 cup Milk
1 tsp. Soy Sauce |
1 can French Fried
Onions
3 cups cooked French Style Green Beans (2 1 lb. cans) drained
dash of Pepper |
In 1 quart casserole, stir soup, milk, and soy sauce until smooth. Mix in 1/2 can
onions, beans and pepper. Bake in a 350 degree oven 20 minutes or until
bubbling. Top with remaining onions. Bake 5 minutes more.

6 hard cooked eggs
1/2 C Miracle Whip
6 bacon slices, crisply cooked, crumbled |
2 tbls. chopped green onion
1/4 tsp garlic salt (or powder) |
