DRESSINGS & SAUCES


Barbeque Sauce

32 oz. ketchup
32 oz. water
3/4 cup sugar
juice of 1 lemon (more or less to taste)
1 1/2 teaspoon celery seed
1 1/2 ground red pepper
1/2 clove garlic minced (more or less to taste)
1 1/2 onions minced (more or less to taste)

Combine all ingredients & simmer until onions are done.

Italian Sauce

1 can (28 oz) Tomato Puree
1 cup water
salt & black pepper
3 Tbsp parsley
1 Tsp oregano
2 Tbsp basil
2 Tsp garlic powder
3 cloves garlic, chopped
1 small onion, chopped
2 Tbsp Extra Virgin olive oil

Saute garlic and onion in olive oil until soft about 3-5 minutes, but not browned. Add tomato, water and spices. Stir. Bring to low boil, stirring occasionally. Lower heat and simmer for 45 minutes continuing to stir occasionally.
